Tasting Notes

This crisp, dark ruby red wine boasts fragrances and nuances of black cherry, raspberry, freshly-picked flowers and sweet, fragrant spices with a hint of leather. Whereas in the mouth, it features a distinct, elegant and balanced flavour profile characterised by a fresh yet flavourful structure giving it bite despite its full-bodied quality. It closes on quite a fruity and persistent note.

Pairing

Roccolo Grassi’s Valpolicella Superiore is a bold, full-bodied red that pairs marvellously with succulent dishes featuring red meat.

Valpolicella Superiore DOC 2013 - Roccolo Grassi: Why we like it

Produced from Corvina, Corvinone, Rondinella and Croatina grapes, Roccolo Grassi’s Valpolicella Superiore hails from vineyards totalling 12 hectares of land, 8 of which are dedicated to Valpolicella and the other 4, older vineyards which are dedicated to the production of Amarone and Recioto. Half the grapes are left to appassire (an Italian term for shrivel up) for 20 days. The grapes then undergo fermentation in steel tanks and are then aged in barriques and 22-hectolitre barrels for 20 months. The wine is then aged for another 10 months once bottled.
