But what is distillation?

Each time the operation is completed, the still must be emptied and cleaned before starting again. The name and shape of the stills vary according to the country of production, local requirements and traditions. The famous Charentais still, for example, is used for the production of Cognac, while the Armagnacais is used for Armagnac. The difference between Cognac and Armagnac, therefore, also lies in the use of stills, which are discontinuous for the former and continuous for the latter.
